Recipe Instructions

Step 1
Heat olive oil in a large skillet over medium-high heat. Stir in onions and turmeric; cook until onions are brown. Add chicken and continue to cook, about 10 minutes.
Step 2
Add water, tomato paste, salt, and pepper. Reduce heat to medium-low and simmer until mixture thickens, 20 to 30 minutes.
Step 3
Heat remaining 3 tablespoons of vegetable oil over medium heat in another large skillet; add potatoes and sauté until cooked through; add a pinch of turmeric and a pinch of salt, if desired. Add carrots and potatoes to chicken, stir together and serve.
Step 4
Meanwhile, put sugar and carrots in a small saucepan over medium heat; cook until sugar melts and carrots are tender; drain. Heat 1 tablespoon vegetable oil in a large skillet over medium heat; add carrots and sauté until light brown. Set aside.
