Recipe Instructions

Step 1
Halve zucchini lengthwise, scrape out and discard seeds; cut into chunks.
Step 2
Transfer to a blender with sugar, lemon zest, lemon juice, and mint. Puree until smooth; strain into a bowl through a mesh strainer. Discard mixture in strainer. Cover and refrigerate strained liquid until cold, 1 to 2 hours.
Step 3
Pour mixture into an ice cream maker and freeze according to manufacturer's directions to desired consistency.
